Bought a new cookbook this week. I'm going to give it a try. Andrew is now gluten-free after his bloodtest results came back. It hasn't been that much different, with the only exception being bread. I still haven't made the perfect sandwich bread for him.

Today is my menu planning day. I'm going to sit down with this cookbook and figure out what is going to be the first of the recipes.

Attempting to make Yogurt...

Well it's not going the greatest. I've tried with Coconut Milk and Almond milk. No go with either. I'm not sure what I've done wrong but 3 attempts and nothing yet.

This weekend I will be making regular milk yogurt. Maybe hubby will eat it. I just want to make sure that my method is right. If it works then I will research more to see what I have been doing wrong.

My little dairy-free soy-free man will have yogurt made by mommy one of these days!

A successful Chocolate Chip Cookie recipe

I was given this recipe from another mom, I don't know where she got it from. But here it is to share.

Ingredients

1 cup dairy free soy-free margarine
1/2 cup dark brown sugar
1/2 cup sugar
1/4 cup oat milk
2 tsp. vanilla extract
2 1/4 cup unbleached flour
1/2 tsp salt
1 tsp baking soda
12 oz dairy free soy free chocolate chips

Instructions

1. Preheat the oven to 350 F
2. Cream together butter and both sugars until light and fluffy. Add oat milk and cream. Mix in vanilla extract.
3. Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chips
4. Drop by teaspoons on greased cookie sheets. Bake at 350 F for 8-10 minutes. Remove from baking sheet and cool on racks.

These only lasted 2 days in my house.

Dairy-Free Soy-Free Diet

And so it begins...on the hunt to feed my little man. Dairy-free and Soy-free is not easy at all.

We have found a milk...Almond milk. He loves it. He also loves the chocolate milk. That's the easy part. Still looking for many others foods he can eat. Cheese, no option yet found. Yogurt nothing either.

And so my hunt continues...
